The application Apple uses to make the backgrounds is pretty sweet. In typical Apple fashion, it's got control rods and easy controls to generate the image. Don't assume that they open up photoshop (or teh GIMP) and apply some filters, no they have a whole application to do it for them because they're so fucking cool.

If you want a quick lazy way to get some great abstract backgrounds search the net for fractal flames. That is essentially all those backgrounds are.

If you are on Windows you can download
Apophysis
http://www.apophysis.org/

Alternatively for both platforms the freeware image editor Gimp has a fractal flame creation tool.
A quick net search for tutorials on that should get you off and running.
