If you need to track billable hours and you want to do it using a client with clear UI, then Billable is for you. Clickable Bliss' first product lets you keep track of clients, has a built in timer to keep track of your time (duh), and support for different billable rates per client. It can also create PDF invoices with your information already filled in.
Until October 31st you can get Billable for $19.95 (after that it goes up to $24.95), and there is a 30 demo available.

Very nice app. I've been using Customer Tracker X and iRatchet for some time now and never liked them. Both of their UI are unnecessarily confusing.
I think I'll use this full time if there isn't any major bugs.

do any time tracking software have a dashboard level component? I'd love to just hit a short key, turn on timer, exit dashboard and do the same when I stop working on the project. Then have the app pull in the data on next launch.
Anything that can be quick to reduce my need to load yet another App, would be great.

Actually ive been using Studiometry by Oranged software. Its awesome. IT has the timer jazz same as this, but when the app is open you have access to all your active timers through the apple menu (an icon isplaced in the grouping near aiport, ichat, date & time, etc..). You can qucikly srat and stop times this way and track timers for multiple clients at a time. Whats even better is that instead of jaust using built in invoce or what have you or having to use a crappy built in layout feature (like MYOB or Quickbooks) you can simply export XML and then precess it with your scripting lang of choice, import into InDesign or whatever or make an XSLT. (Not to worry there are some built in layouts and options if you dont care for all this visual customization). And if that wasnt good it can also run as a server or as a client. Which is great if youre mobile. It also has some project management features to track tasks and all that good stuff - and i think this can even sync with iCal... course i dont use iCal so i cant speak to this. In going along with that you can also set up autobilling and all kinds of stuff... I highly recommend it. Its delayed me rolling my own project manager - and i couldnt be happier. I wa snot looking forward to that haha.

“On the Job“ does everything „I“ need.
I don’t even use the Invoice feature.
There are other tools for writing Bills.
Nice & clean App, that tracks your Time.
Asks you to subtract when you have been idle.
Easy to use. Nice & clean Ui.
Shows the Time in the Dock. Thats it!
It feels as small as a widget.
Actually it starts faster, than my bunch of widgets do.
P.S. Forget about the privious versions...start with version 2

I've been using iBiz for all my timed billing for years, it has great intergration with Address-book and quickbooks... Is is also a $20 app....
