Holding the Command key (aka the Apple key) and pressing Tab will cycle through your open applications. It's easier to Cmd-Tab if you are Copy (Cmd-C) and Pasting (Cmd-V) to and from various applications.

Is there anywhere that has better/more pictures and features documented for Doozla? The official site is pretty weak on the details. Also, is that reduced price available for people not at the conference?

Why don't you just download the trail and play with it and see how it works. I did that yesterday. It is pretty easy and little kids will have no problems having fun with it. (Big kids too!)
