iPhone forensics market developing
Apparently something big is going down in the iPhone forensics world. TUAW has learned that about a half dozen different firms are actively hunting for developers who can assist law enforcement in reading data off unjailbroken iPhones, both the private and public partitions. We've been in touch with third-party Mac developers who have been contacted. Want a gig as an iPhone CSI? You'll need a good working knowledge of the iTunes protocol and a way to communicate directly with the iPhone without altering any data that could be used for evidence.

There's already one program that I can recall that offers to obtain evidence in a forensically sound way from iPhone (varying amounts of info can be retrieved depending on firmware version and whether it's jailbroken or not.

I think the ideal method will involve removing storage from the iPhone and attaching it to another system/device thas alredy booted. I'm not opening my iPhone to see what it looks like. Anything that involves retrieving data via the iPhone OS may not cut it.
Once you can image the storage device it can be analyzed with existing forensic tools.
