I know I'm probably one of a very few,
but I jailbroke (jailbreaked?) my iPhone Saturday afternoon and restored it Sunday morning.
Yes, the camera app was nice, and so was the doodling one, and Drummer was really fun, but I honestly had no use for any of them. It was great, but it wasn't practical (for me).
I think with the App Store, the true potential of the iPhone will finally be unleashed.
