Ummm... Quicksilver? I guess the problem might be the modular interface system, but you can't tell me it's UI isn't one of the slickest around, even ignoring the Bezel skin. I mean, he manages to make the trigger preferences and module preference panes sexy. And Constellation? Don't get me started.

That's ok, but "applications" is quite a broad term.
I'm surprised Luxology's modo didn't appear on this list. It has a revolutionary interface that reforms its functionality based on the available sceenspace. It's extremely elegant and beautifull too.

RAPID WEAVER?!! No way. SandVox hands down is more elegant and user friendly.
I would include QS, Yojimbo, and my recent favorite - Vienna - a free RSS reader.
Heck, even add Preview to this mix. It works and works well.

Fantastic look-and-feel, even better than iChat. Who would have thought it possible from Yahoo, a company that has seemed to marginalize Macs lately?

It's not out yet, but iClip 4 looks like it's going to be a stunner, based on the screenshots they've released. Also, there's a gorgeous (although rather girly, which is fine with me) solitaire app called Kitty Spangles solitaire that has some of the best use of 3-D cutouts, shadowings, etc that I've seen, plus it scales beautifully. (Both shareware.)
